Spanish Cocido Madrileño Recipe

Ingredients:
Meats:
2.2 lbs beef (e.g. beef shank)
1.1 lbs chicken breast
7 oz chorizo sausage
7 oz morcilla (blood sausage)
Vegetables:
2 carrots
2 potatoes
1/2 celeriac
1/4 cabbage
1 bay leaf
1 clove garlic
1 onion
Spices:
Salt
Pepper
Olive oil
Instructions:
Wash and dice the beef. Dice the chicken breast as well.
Heat the olive oil in a large pot, then fry the beef.
When the beef is browned, add the chicken breast and fry further.
Add the onion, bay leaf, garlic, salt, and pepper.
Pour in water and bring to a boil.
Cover the pot and simmer the meat for about 1 hour.
Add the carrots, potatoes, celery, and cabbage.
Cook for about 30 more minutes, or until the vegetables are tender.
Add the chorizo sausage and morcilla and cook for about 10 more minutes.
Serve the cocido madrileño with the broth, vegetables, and sausage.
Tips:
You can also serve cocido madrileño with pasta or rice.
You can also make a delicious soup from cocido madrileño. Remove the meat and vegetables from the broth, then serve the soup with pasta or noodles.
Cocido madrileño tastes even better the next day, so it is worth making it the day before.
