Hortobágyi pancake (stuffed pancake with meat and sauce): A Mouth-Watering Hungarian Classic

Description:

Hortobágyi palacsinta is one of the most delicious dishes of Hungarian cuisine. It is made with meat-filled pancakes served with a sour cream-paprika sauce. Ingredients:

For the pancakes:

    3 eggs

    300 g flour

    2.5 dl milk

    1 pinch of salt

    1 dl soda water

 

For the filling:

    400 g minced pork

    1 onion

    1 clove garlic

    1 tablespoon paprika

    1 teaspoon ground cumin

    salt

    pepper

    1 tablespoon lard

 

For the sauce:

    2 tablespoons lard

    2 tablespoons flour

    500 ml broth

    200 g sour cream

    1 tablespoon paprika

    1 teaspoon ground cumin

    salt

    pepper

 

Instructions:

For the pancakes:

    Mix the eggs, flour, milk, salt, and soda water into a smooth batter.

    Let the batter rest for 30 minutes.

    Fry thin pancakes in a pan greased with oil.

 

For the filling:

    Chop the onion and crush the garlic.

    Fry the onion in lard until translucent.

    Add the minced meat and fry until browned.

    Season with paprika, cumin, salt, and pepper.

    Add a little water and simmer until tender.

 

For the sauce:

    Fry the flour in lard until golden brown.

    Gradually add the broth and stir until smooth.

    Add the sour cream, paprika, cumin, salt, and pepper.

    Bring the sauce to a boil.

 

Assembly:

    Spoon the filling onto the pancakes and fold in the edges.

    Serve the pancakes with the sour cream-paprika sauce.

 

Tips:

    Hortobágyi palacsinta is best served fresh.

    You can add mushrooms, peppers, and tomatoes to the filling to taste.

    You can also season the sauce with chili peppers to taste.
