Ingredients:
500g pork tenderloin (cut into strips)
1 tablespoon butter or oil
1/2 teaspoon ground ginger
1/2 teaspoon garlic powder
1/4 teaspoon ground coriander
1/4 teaspoon ground cumin
1/4 teaspoon black pepper
1/2 cup chopped onion
1/4 cup chopped parsley
Salt and pepper to taste
Instructions:
Cut the pork tenderloin into strips.
In a bowl, combine the butter or oil, ginger, garlic powder, coriander, cumin, pepper, onion, parsley, salt, and pepper.
Add the pork to the marinade and mix to coat all sides.
Marinate the pork in the refrigerator for 30 minutes to 1 hour.
Heat a skillet over medium heat.
Add the marinated pork to the skillet and cook until browned and cooked through.
Serve Siga Tibs with injera.
Tips:
You can use pork shoulder, pork loin, or ground pork instead of pork tenderloin.
