Cuba: Ropa Vieja (Shredded Pork)

Ropa vieja is a traditional Cuban dish made from slow-cooked and then shredded pork. Ropa vieja is typically served with tomato sauce, beans, rice, and vegetables. Ropa vieja's origins can be traced back to Spanish cuisine, and it became popular in Cuba in the 19th century.
Ingredients:
1 kg pork shoulder (bone-in and skin-on)
1/2 cup olive oil
1 large onion (chopped)
2 cloves garlic (crushed)
1/2 cup tomato paste
1 cup tomato sauce
1/2 cup water
1/4 cup ground cumin
1/4 cup paprika
1/4 cup oregano
1/4 cup salt
1/4 cup pepper
1 bay leaf
1 cup beans (cooked)
1/2 cup green bell pepper (sliced)
Instructions:
Heat the olive oil in a large pot.
Add the onion and garlic and sauté until translucent.
Add the pork and brown on all sides.
Add the tomato paste, tomato sauce, water, cumin, paprika, oregano, salt, pepper, and bay leaf.
Bring to a boil, then reduce the heat and simmer, covered, for 2-3 hours, or until the pork is tender and can be shredded.
Add the beans and green bell pepper and cook for an additional 10 minutes.
Serve ropa vieja with rice.
Tips:
You can use pork butt instead of pork shoulder.
The cooking time may vary depending on the size of the pork.
Ropa vieja can be stored in the refrigerator for 3-4 days or frozen.
