Chile: Curanto (Grilled Seafood and Pork)

Description:

Curanto is one of Chile's most famous dishes, which is traditionally made from grilled seafood and pork in a pit. Curanto is typically made with clams, crab, fish, potatoes, corn, and sweet potatoes. Curanto is prepared on the beach in a pit that is filled with hot stones. The seafood and meat are covered with leaves and steamed in the pit until cooked.

 

Ingredients:

    1 kg clams

    1 kg crab

    1 kg fish

    1 kg potatoes

    1 kg corn

    1 kg sweet potatoes

    1 kg pork

    Salt

    Pepper

    Vegetables (optional)

 

Instructions:

    Dig a pit on the beach.

    Fill the pit with hot stones.

    Place the seafood, meat, potatoes, corn, sweet potatoes, and vegetables on the stones.

    Cover the pit with leaves.

    Steam the Curanto for 1-2 hours, or until the seafood, meat, and vegetables are cooked.

 

Tips:

    You can also make Curanto in the oven at home.

    Curanto can be served with rice or salad.
