Australian Lamb Stew Recipe: Hearty and Flavorful

Australian lamb stew is a classic comfort food that is full of flavor and perfect for a cold day. Here is an easy recipe:
Ingredients:
2.2 pounds lamb (leg, shoulder, or stew meat)
2 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, minced
2 tablespoons flour
1 cup red wine
1 cup beef broth
1 bay leaf
1 teaspoon thyme
1 teaspoon rosemary
Salt and pepper to taste
2.2 pounds potatoes
Instructions:
Heat the oil: Heat the oil in a large pot over medium heat.
Sear the meat: Add the lamb and sear on all sides until browned. Remove from the pot and set aside.
Sauté the vegetables: Add the onion and garlic to the pot and sauté until softened.
Stir in the flour: Stir in the flour and cook for 1-2 minutes.
Add the liquids: Add the red wine and beef broth. Bring to a boil, then reduce heat and cover.
Braise the meat: Add the bay leaf, thyme, rosemary, salt, and pepper. Return the lamb to the pot and braise for 1-1.5 hours, or until the meat is tender.
Add the vegetables: Add the potatoes, carrots, and celery. Cook for an additional 30-40 minutes, or until the vegetables are tender.

Tips:
For extra flavor, add 1-2 tablespoons of tomato paste to the stew.
The stew can also be made in a slow cooker. Add all the ingredients to the slow cooker and cook on low for 6-8 hours.
The stew can also be frozen. Cook the stew and then let it cool. Freeze in an airtight container.
